El Diviso is a family-run farm located in Bruselas, Pitalito – Huila, Colombia, at 1,780–1,900 meters above sea level. Founded 27 years ago by José Uribe Lasso, the farm is now led by his son, Nestor Lasso, whose innovative coffees are gaining global recognition. The Lasso family is known for experimenting with processes and cultivating unique varieties like Ají, Rosado, and Sidra Bourbons, as well as Geishas.
This lot, a Colombia variety, undergoes a meticulous three-stage fermentation: starting with an oxidation rest, followed by depulping and additional oxidation, and finishing with 40 hours of submerged anaerobic fermentation with mosto recirculation. The coffee is sun-dried in a canopy and mechanically finished in a silo, then rested for at least 10 days.
The result is a cup that is sweet and floral, with red berry and caramel notes, silky body, and an elegant texture—an expression of El Diviso’s innovation and terroir.
